Ingredients
1poundbreakfast sausage
1cupshredded cheddar cheese
1cupall purpose flour (GF 1:1 all purpose flour will also work)
1 ½tspbaking powder
1tspsugar (optional)
3/4cupmilk
Instructions
Preheat oven to 400F. Lightly spray mini muffin tins with cooking spray (about 24 mini muffins).
Cook sausage in a skillet over medium to medium heat until cooked through, breaking into small pieces with a heat-safe spatula or wooden spoon.
Stir together flour, baking powder, sugar (optional) in a large bowl. Stir in shredded cheese last.
Add sausage to dry ingredients, and stir. Add milk and stir just until moistened.
Scoop mixture into mini muffin tin, filling each cup to the top (will make about 24 mini muffins). Bake for about 15 minutes at 400F.
Notes
Easily make this recipe gluten free by substituting your favorite 1:1 GF all purpose flour.
This recipe can also be made dairy free with your favorite DF milk and cheese-style shreds.
