This easy eggless Spinach Dip is creamy and flavorful, with only 6 ingredients! If you have cream cheese, parmesan, and fresh spinach in your fridge, you're probably good to go. It's perfect for a last minute appetizer for unexpected company, or a potluck item for that party you forgot about.

Ingredients
2 1/2cups(or 4 oz) fresh spinach, finely chopped
1Tablespoonbutter
1teaspoonminced garlic (OR 1/4 tsp garlic powder)
4ounces(or 1/2 cup) cream cheese
1/4cupmilk
1/4cupgrated parmesan cheese
Salt & Pepper to taste

1-2tsplemon juice
Instructions
Finely chop the fresh spinach leaves (may also pulse in food processor or shred with hands). I used half of an 8 oz. bag of fresh spinach.
In medium saucepan, heat butter and minced garlic over medium heat until butter is melted.
Add cream cheese and milk. Continue to cook, stirring/whisking until cream cheese is melted and well combined.
Once hot, remove from heat and immediately stir in spinach and parmesan cheese (and lemon juice, if using). Add salt and pepper to taste. Serve hot or chilled with tortilla chips, fresh vegetables, or french bread.
Notes
Microwave Option: In large microwave safe bowl, heat butter, garlic, cream cheese, and milk in 15-30 second increments, stirring or whisking in between. Once hot, stir in Parmesan cheese and spinach immediately. Add salt and pepper to taste.
