With food allergies in my family, we’re making most of our foods from scratch. Fortunately, unlike many store bought dips, this one contains no eggs and is almost as quick as the pre-made stuff… only it tastes better, since it’s made with fresh spinach – plus, bonus vitamins and nutrients!

This quick homemade Spinach Dip is easy to make either on the stovetop or in the microwave, and simply requires a single bowl or pot. It’s delicious hot OR cold (you can make it ahead!) with tortilla chips, sliced fresh veggies, or french bread. You could also serve it as a pasta sauce, or spread it on a turkey or chicken sandwich for a creamy boost of flavor.

Ingredients

  • 2 1/2 cups (or 4 oz) fresh spinach, finely chopped
  • 1 Tablespoon butter
  • 1 teaspoon minced garlic (OR 1/4 tsp garlic powder)
  • 4 ounces (or 1/2 cup) cream cheese
  • 1/4 cup milk
  • 1/4 cup grated parmesan cheese
  • Salt & Pepper to taste

Optional

  • 1-2 tsp lemon juice

Instructions

  • Finely chop the fresh spinach leaves (may also pulse in food processor or shred with hands). I used half of an 8 oz. bag of fresh spinach.
  • In medium saucepan, heat butter and minced garlic over medium heat until butter is melted. 
  • Add cream cheese and milk. Continue to cook, stirring/whisking until cream cheese is melted and well combined. 
  • Once hot, remove from heat and immediately stir in spinach and parmesan cheese (and lemon juice, if using). Add salt and pepper to taste. Serve hot or chilled with tortilla chips, fresh vegetables, or french bread.

Notes

Microwave Option: In large microwave safe bowl, heat butter, garlic, cream cheese, and milk in 15-30 second increments, stirring or whisking in between. Once hot, stir in Parmesan cheese and spinach immediately. Add salt and pepper to taste.
