Don’t let that list scare you, though – the ingredients are minimal, and these delicious eggless breakfast bites come together surprisingly quickly! With these eggless sausage hash brown bites being homemade, you know exactly what’s going into them, an important aspect to many food allergy families (such as ours!).

With my son’s egg, peanut, and tree nut allergies, I’m always on the hunt for new and fun breakfast items for the family. These eggless sausage hash brown bites just might be our favorite one yet! This recipe calls for milk and cheese, but if you are also handling a dairy allergy, I’m confident that it would also turn out well with your favorite dairy free milk and cheese substitute. This one was made in a regular sized muffin tin and filled about halfway. it made it into more of a sausage hash brown patty. Also really yummy!

Egg Free Sausage Hash Brown Bites

These egg free Sausage Hash Brown Bites combine some of my favorite eggless breakfast items in one. Sausage, hash browns, cheese, and a touch of homemade biscuit dough to bind it all together. Don't let all the ingredients scare you, though – they come together easily and quickly!

Ingredients

  • 1 pound ground breakfast sausage
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder (not soda)
  • 1 tsp sugar (optional)
  • 1 1/4 cups shredded cheddar cheese
  • 3 cups frozen hash browns (AKA frozen shredded potatoes)
  • 1 cup milk

Spices (Optional)

  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1/4 tsp onion powder
  • 1/4 tsp rubbed sage

Instructions

  • Preheat oven to 400F. Spray mini muffin tin (will need about 24-30, depending on how full you fill cups). 
  • Cook sausage in skillet over medium heat until cooked through, breaking up with a wooden spoon as it cooks. Drain cooked sausage, and allow to cool. Optional: stir in spices.
  • In a large bowl, whisk together flour, baking powder, sugar, cheese, and hash browns. Stir in cooked sausage. Add milk and stir until thoroughly combined.
  • Spoon mixture generously into mini muffin tins, filling each cup to the top. You can also heap them up, or fill them part-way to make more of them (I do this for gatherings) – just keep an eye on them in the oven as the size is adjusted.
  • Bake at 400F for approximately 18 minutes, or until golden brown. Allow to cool for several minutes before removing from pan.

Notes

To make Dairy Free, simply use your favorite DF milk and cheese substitutes.

    Have you tried mixing in anything else?

    I came across your recipe while looking for homemade versions of the Jimmy Dean stuffed hashbrowns. My favorite of the store-bought version has onion, bell pepper and bacon stuffed in the hasbrown.

    I know that this isn’t the same thing, but it does seem to be a similar concept so I’m wondering about using something other than or in addition to the sausage…

      Hello! I haven’t tried mixing anything else in yet (mostly because my kids wouldn’t like it), but I bet it would be awesome with those mixed in instead of the sausage! Since it’s mostly a biscuit dough with sausage added to it, I think the mix-ins could be changed up with other options, if the amounts are similar. I would also use cooked peppers (vs. raw), so they don’t add additional moisture to the batter.

      Hi Toki! I haven’t tried this recipe with fresh potatoes (yet!) – if you try it, I would recommend drying off the potatoes after grating to remove the excess starch and moisture. I hope this helps! I’d love to hear how they turn out if you do try it this way.

        We have baked them, then frozen and reheated many times! It’s been a while, but I usually microwave them first to thaw, then pop them in the oven on a baking sheet to crisp them up a little. They’re great to make ahead for weekend trips. 🙂

        Hi Kayla! We’ve been using ground pork sausage from Aldi (in the round tube), but we have also used Johnsonville, Jennie-O turkey sausage, and Jimmy Dean in the past. Our allergies are eggs, peanuts, and tree nuts. I hope this helps!
