Egg Free Apple Cinnamon Waffles (Dairy Free/Vegan)
These Egg Free Apple Cinnamon Waffles are a tasty twist on a brunch staple. They're toasty on the outside, tender on the inside, and filled with warm apple cinnamon flavor. For additional apple cinnamon flavor, top them with my sweet Caramelized Cinnamon Apples. Note: the applesauce gives them a slightly higher moisture content, so they may take an extra minute or so in the waffle iron for the outside to crisp.

Ingredients
2 1/4cupsall purpose flour
3Tbspgranulated sugar
2Tbspbaking powder
1/2tspsalt
2tspcinnamon
1 3/4cupsmilk (or DF milk)
1/2cupunsweetened applesauce
1/2cupvegetable or canola oil
1tspvanilla
Instructions
Preheat waffle iron. Lightly spray waffle iron with cooking spray.
Whisk together all dry ingredients (flour, sugar, baking powder, salt, and cinnamon) in large bowl.
Add milk, applesauce, oil, and vanilla to dry mix and whisk together just until combined. Allow batter to rest for about 3 minutes.
Cook according to waffle iron instructions, adding 1-3 minutes (check for crispness as it gets close).
When finished, carefully remove waffle. I pierce the waffle on the outer edge with a fork, and gently pull away from the waffle iron. TIP: to prevent sogginess, place cooked waffles on cooling rack while you cook remaining waffles.
