Summer break is here, and it's time to share my creamy egg free coleslaw recipe! This tangy coleslaw requires no eggs or mayo, and comes together in a pinch. You'll just need just a handful of standard ingredients from your fridge and pantry, along with a bag of dry coleslaw mix. Double the recipe for a larger batch – perfect for a summer barbecue or a larger group!

Dressing Ingredients
2/3cupsour cream or Greek yogurt (plain, unsweetened)
2Tbspsugar
1 1/2Tbspapple cider vinegar
1Tbsplemon juice
1Tbspextra virgin olive oil
1/2tspdijon mustard
1/2-3/4tspsalt, to taste
Black pepper, to tasteto taste
Coleslaw
114 oz. bagdry coleslaw mix
Instructions
In a large bowl, stir or whisk together all coleslaw dressing ingredients until creamy and combined.
Add bag of coleslaw mix, and stir until evenly distributed. Cover and refrigerate until ready to serve. Stir again just before serving.
Notes
You may substitute another neutral flavored oil for the olive oil, if desired. White vinegar may be used in place of apple cider vinegar.
