Earth Day is right around the corner – celebrate with my egg free Earth Day sugar cookies! Blue and green cookie dough come together to make a cute, Earth-inspired cookie. These cookies are easy to make, and they stay deliciously soft and chewy after cooling. *This is a small batch, so plan to double it if you're baking for a crowd.

Ingredients
2/3cupgranulated sugar
1/2cupbutter (softened, but not completely melted)
1 1/2Tablespoonsmilk
1Tablespoonunsweetened applesauce, level
1/2tspvanilla
Food Coloring
1 1/3cupsall purpose flour, lightly spooned into measuring cup and leveled across the top
1/2teaspoonbaking powder (not soda)
1/2teaspoonsalt
Instructions
Preheat oven to 350F.
In a large bowl, stir together softened butter and sugar until creamy and well-combined. Stir in vanilla, applesauce, and milk.
In a separate smaller bowl, stir together flour, baking powder, and salt.
Add the dry mix to the wet mixture, and stir until combined. (If dough seems dry, add 1 teaspoon of additional milk at a time.)
Divide dough evenly into two bowls (I use the same bowls used for mixing dry/wet ingredients). Add blue food coloring to one bowl, and green food coloring to the second bowl. Stir each until color is evenly distributed.
Roll together some dough from each bowl to make a blue and green marbled dough ball. Each ball should be about 1 1/2-2 tablespoons.
Place cookies onto cookie sheet at least 2 inches apart. Bake at 350F for 10-12 minutes. They will look slightly puffy when removed, but they will set on the pan (and deflate a bit) once out of the oven.
Allow cookies to cool on the pan for 3-5 minutes before carefully transferring to a cooling rack.
If desired, drizzle with glaze (see recipe in notes below) once cookies are fully cooled.
Notes
Classic Vanilla Glaze: After cookies have cooled, stir all ingredients below together, and drizzle over the top. After glaze has set, cookies may be stacked and stored in an airtight container.
