This delicious egg free cinnamon bread is swirled with cinnamon, and made with simple ingredients. It's a quick bread that rises nicely in the oven, with a toasted cinnamon top. It's great with or without a vanilla glaze on top, and slices up perfectly for breakfast or a snack. It requires mostly pantry staples so you can have it made from start to finish in about an hour, and has the texture of a moist cinnamon coffee cake.

Ingredients
Wet Ingredients
2/3cupsugar
1/4cupunsweetened applesauce
1/3cupvegetable oil
1cupmilk
1 1/2tspvanilla extract
Dry Ingredients
2cupsflour
1Tbspbaking powder
1/2tspbaking soda
1/2tspsalt
Cinnamon Swirl
4Tbspbutter or DF margarine
1/3cupsugar
2tspcinnamon
Instructions
Preheat oven to 350F, and spray an 8x4 or 9x5 loaf pan with cooking spray. For easier cleanup, you can also line your pan with parchment paper (I also spray, for extra measure).
Melt butter in a small bowl, and stir together your cinnamon sugar blend in a second bowl. Keep the butter and cinnamon-sugar mix separate.
Stir together all wet ingredients in a large bowl, and whisk together dry ingredients in a separate bowl.
Add dry ingredients to the wet ingredients, and stir/whisk just until combined. Try not to over-stir your cinnamon bread batter, or it may not rise as well.
Sprinkle 1-2 tsp of cinnamon-sugar blend on the bottom of prepared pan. Gently spoon about 1/4 of the batter (this doesn't have to be perfect, just estimate) evenly into bottom of pan. Drizzle about 1/3 of melted butter on top, then sprinkle 1 heaping Tablespoon of cinnamon-sugar on top of that.
Repeat above step three times, finishing with batter on top. Sprinkle all remaining cinnamon sugar on top to finish.
Gently run a sharp knife through the batter several times (see photo). Create only a few lines or swirls, so the batter isn't over-worked.
Bake at 350F for about 50 minutes. For best results, cool before slicing. Allow to cool completely before storing in an airtight container.

For a dairy free and vegan version of this Cinnamon Bread, swap out the milk and butter for your favorite dairy free substitutes!Optional Glaze – stir all ingredients below together, an drizzle over top of bread:
1/2 cup confectioners sugar
2-3 tsp milk (start with 2 tsp, and add more if too thick)
