These egg free Crispy Baked Chicken Strips are eggless, dairy free, and toddler-approved! They're easy to make with a few basic ingredients, spices, and crackers. My egg/dairy free chicken strips are baked instead of fried, and crisp up nicely in the oven.

Ingredients
1 1/2poundsboneless, skinless chicken breasts OR thighs
3Tbspvegetable or olive oil
1cupcrushed Ritz crackers or similar (about 24 Ritz), OR breadcrumbs
2Tbspall purpose flour
3/4tspsalt
1/4tspchili powder
1/8tsponion powder
1/8tspgarlic powder
Instructions
Preheat oven to 400F, and grease edged baking sheet with cooking spray.
Cut chicken into 1 1/2 inch strips (or nuggets) and mix with oil, using your hands or a large spoon, until evenly coated.
Crush crackers into crumbs – I use a food processor, or crush them in a plastic Ziploc bag. Stir in flour and spices and place in a medium to large bowl.
Press each chicken strip into the dry mix until evenly coated, and place on baking sheet, allowing space between each piece.
Bake 10-14 minutes, or until bottom is crisp and golden brown. Carefully flip each piece, and bake an additional 8 minutes, or until chicken is cooked through and both sides are golden brown. Please note: bake time will depend on the size of your cuts.
