Egg Free Mini Corn Dogs (can also be made Dairy Free)
These eggless Mini Corn Dogs are the perfect snack or meal for hungry kids (or adults!). They’re allergy friendly, have a short ingredients list – things you probably already have on hand! – and are baked instead of fried. Bonus: they take less than 25 minutes from start to finish!

Ingredients
2/3cupall purpose flour + 1/2 tsp for dusting hot dogs
1/2cupcornmeal
3Tbspsugar
1/2tspbaking powder
1/4tspsalt
1/8tsponion powder (optional)
1/2cupmilk of choice
3Tbspunsweetened applesauce
3Tbspcanola or vegetable oil
6hot dogs
Instructions
Preheat oven to 400F. Spray mini muffin tins (24 mini muffin cups) with cooking spray.
Cut each hot dog into 4 equal size pieces. In a small bowl, lightly dust the hot dogs with 1/2 teaspoon of flour until lightly coated (this will help them stick to the batter).
In a bowl, whisk or stir together flour, cornmeal, sugar, baking powder, salt, and onion powder (optional).
Add milk, applesauce, and oil and stir just until combined.
Scoop batter equally into 24 mini muffin cups. Press 1 hot dog piece into each cup (the batter will come up around the hot dog on either side).
Bake for about 10 minutes, or until batter is lightly golden and cooked through. Allow to cool in pan for several minutes before carefully removing.
