These egg free pumpkin waffles are lightly sweetened and spiced, and delicious any time of year. The batter comes together quickly with pureed pumpkin (canned works great) and a few basic pantry staples. You'll be enjoying this fall comfort breakfast food in no time!

Ingredients
2cups+ 2 Tbsp all purpose flour
1/4cupsugar
1 1/2Tbspbaking powder
1/2tspsalt
1tsppumpkin pie spice
1tspcinnamon
Wet Ingredients
2cupsmilk (or DF milk)
2/3cuppumpkin puree
2/3cupvegetable or canola oil
1tspvanilla extract
Instructions
Preheat your waffle iron while you prepare the batter.
In a large bowl, stir or whisk together all dry ingredients.
Add all wet ingredients to dry ingredients. Whisk or stir together just until combined.
Bake waffles according to waffle iron instructions. I get four large Belgian waffles with my iron. This recipe also works great with mini waffle irons! Enjoy warm with maple syrup or toppings of choice.
