These egg free Sausage Hash Brown Bites combine some of my favorite eggless breakfast items in one. Sausage, hash browns, cheese, and a touch of homemade biscuit dough to bind it all together. Don't let all the ingredients scare you, though – they come together easily and quickly!
Preheat oven to 400F. Spray mini muffin tin (will need about 24-30, depending on how full you fill cups).
Cook sausage in skillet over medium heat until cooked through, breaking up with a wooden spoon as it cooks. Drain cooked sausage, and allow to cool. Optional: stir in spices.
In a large bowl, whisk together flour, baking powder, sugar, cheese, and hash browns. Stir in cooked sausage. Add milk and stir until thoroughly combined.
Spoon mixture generously into mini muffin tins, filling each cup to the top. You can also heap them up, or fill them part-way to make more of them (I do this for gatherings) – just keep an eye on them in the oven as the size is adjusted.
Bake at 400F for approximately 18 minutes, or until golden brown. Allow to cool for several minutes before removing from pan.

To make Dairy Free, simply use your favorite DF milk and cheese substitutes.
