This moist Apple Cinnamon Coffee Cake is spiced with ground cinnamon, and loaded with fresh apples and simple ingredients. It's naturally egg free, and can easily made dairy free. It's a tasty addition to any breakfast for brunch. Perfect for fall!

Ingredients
2/3cupunsweetened applesauce
1/2cupgranulated sugar
1/4cupvegetable oil (or melted butter, if desired)
1tspvanilla extract
2/3cupmilk or DF milk substitute
1 3/4cupsall purpose flour
2tspcinnamon (+ 1/4 tsp, for dusting apples)
1tspbaking soda
1tspbaking powder
1/2tspsalt
2cupspeeled and diced apples (about 2 medium apples)
(Optional) Cinnamon Streusel Topping
2Tbspbutter (or DF butter substitute), softened
1/4cupgranulated sugar
1/2tspcinnamon
5Tbspall purpose flour
(Optional) Vanilla Glaze
1/2cupconfectioners sugar
2-3tspmilk or DF milk substitute (start with 2 tsp, and add more if consistency is too thick)
1/4tspvanilla extract
Instructions
Preheat oven to 350F. Line 8" or 9" round cake pan with parchment paper, or grease with cooking spray. Prepare apples by peeling and dicing them, and tossing with 1/4 tsp of cinnamon.
In a large bowl, stir together applesauce, sugar, oil, and vanilla extract.
In a smaller bowl, stir together flour, baking soda, baking powder, cinnamon, and salt.
Add half of flour mix and half of the milk into wet ingredients, and stir gently. Repeat with remaining dry ingredients and milk, and stir just until combined. Gently fold apples into batter.
Spread batter into prepared pan. (Optional: stir together all Cinnamon Streusel ingredients until consistency resembles wet sand. Crumble streusel evenly onto top of cake before baking).
Bake at 350F for 35-40 minutes, or until a toothpick comes out clean.
For glaze, stir together all glaze ingredients, and pour over top of cake (double glaze recipe for more coverage).
