This moist egg free Cinnamon Apple Coffee Cake is made with simple ingredients, and spiced with ground cinnamon. It’s naturally egg free, and can also easily made dairy free. My eggless apple coffee cake is a tasty addition to any breakfast for brunch. It’s sweetened with applesauce and a little sugar, and loaded with fresh diced apples. Perfect for fall!

I recently updated the recipe to include a cinnamon streusel topping, and it definitely takes the flavor to the next level. You can also leave off the streusel, and top with a simple glaze instead. However, if you have a few extra minutes, I highly recommend the cinnamon streusel!

We had some apples left over from my parents trees recently, and they were going soft. I wanted to make something, but with two small children at home, I didn’t want to spend the time on an apple pie or a crisp. So I chopped some up and tossed them into this easy apple cinnamon coffee cake! I used my egg and dairy free Apple Cinnamon Bread recipe as the base, and modified it from there.

The apple cinnamon coffee cake pictured below was baked in a 9″ cake pan, and topped with a simple vanilla glaze.

This Cinnamon Apple Coffee Cake recipe calls for milk and butter. However, you can substitute DF milk, and use vegetable oil in place of butter. I have tried both butter and oil in this recipe, and both ways turn out equally delicious! The cinnamon and apples are the predominant flavor, so you won’t notice a difference between butter and oil.

When I first tested this recipe, I made the mistake of making it before dinner, and it quickly turned into a Cinnamon Apple Coffee Cake APPETIZER. None of us were complaining, though. 😉

Simple Ingredients

This apple cinnamon coffee cake uses simple ingredients, and no special egg substitutes. From the pantry, you’ll need a few essentials, like flour, sugar, vanilla, cinnamon, baking powder & soda, and salt. For the streusel, you will also need butter or margarine.

Streusel is a great topping for many muffins and quick breads, and is very easy to make. Add cinnamon and sugar to your softened butter, then add flour until it resembles the consistency of wet sand. That’s it! Sprinkle it on top of your muffins or bread before baking for a tasty cinnamon crunch.

How to Make Egg Free Apple Cinnamon Coffee Cake

This is a simple recipe with easy instructions, making it a fun one for kids to help out with! (You’ll want to help them with peeling and dicing the apples, though). Jump to recipe below for full ingredients and instructions list.

Prepare by peeling and dicing your apples, and tossing with a little cinnamon.

Start the batter by stirring together applesauce, sugar, oil, and vanilla extract in a large bowl. In a second bowl, stir together your dry ingredients. When measuring your flour, be sure to lightly spoon it into a dry measuring cup, and level off with a knife. Never pack or shake down your flour, or you will end up with too much (and a dry baked good).

Stir in about half of the flour mix to your wet ingredients, and then half of the milk. Add remaining flour and milk, and stir just until combined. Slowly incorporating the milk and dry ingredients makes for a lighter/fluffier cake.

Make and sprinkle streusel on top before baking, if desired. After your cake has baked a cooled a little, add the glaze!

Ingredients

  • 2/3 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil (or melted butter, if desired)
  • 1 tsp vanilla extract
  • 2/3 cup milk or DF milk substitute
  • 1 3/4 cups all purpose flour
  • 2 tsp cinnamon (+ 1/4 tsp, for dusting apples)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups peeled and diced apples (about 2 medium apples)

(Optional) Cinnamon Streusel Topping

  • 2 Tbsp butter (or DF butter substitute), softened
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 5 Tbsp all purpose flour

(Optional) Vanilla Glaze

  • 1/2 cup confectioners sugar
  • 2-3 tsp milk or DF milk substitute (start with 2 tsp, and add more if consistency is too thick)
  • 1/4 tsp vanilla extract

Instructions

  • Preheat oven to 350F. Line 8" or 9" round cake pan with parchment paper, or grease with cooking spray. Prepare apples by peeling and dicing them, and tossing with 1/4 tsp of cinnamon.
  • In a large bowl, stir together applesauce, sugar, oil, and vanilla extract.
  • In a smaller bowl, stir together flour, baking soda, baking powder, cinnamon, and salt.
  • Add half of flour mix and half of the milk into wet ingredients, and stir gently. Repeat with remaining dry ingredients and milk, and stir just until combined. Gently fold apples into batter.
  • Spread batter into prepared pan. (Optional: stir together all Cinnamon Streusel ingredients until consistency resembles wet sand. Crumble streusel evenly onto top of cake before baking).
  • Bake at 350F for 35-40 minutes, or until a toothpick comes out clean.
  • For glaze, stir together all glaze ingredients, and pour over top of cake (double glaze recipe for more coverage).

      Hello! The butter should be softened (but not completely melted). Thank you for pointing that out – I see that I left that part out of the instructions. I just updated it. 🙂

    Just finished a piece and Oh My Goodness was it delicious! I have a Vegan friend coming by for coffee tomorrow and will definitely serve this. Only change is that I used erythritol subs for all the sugars as I am pre-diabetic. Had to smack hubby’s hand to keep him from taking a second helping… it’s that good! Thanks for the recipe! 🙂
