This cilantro lime rice is the perfect combination of lime, fresh cilantro and buttery rice, and makes an excellent side dish for a variety of meals!

Ingredients
2cupsrice, uncooked
1/4cupbutter or margarine
1cupfresh cilantro, loosely packed
1 1/2Tbsplime juice
1/2 to 1tspsalt (I use 1 teaspoon, but this may be too salty for some)
1/8tsponion powder
1/8tspgarlic powder
Instructions
Rinse and cook rice in a rice cooker, or according to package instructions.
Wash cilantro and remove stems (I leave some in, but remove the bulk of it).
In a food processor (I love our Ninja), combine melted butter, cilantro, lime juice, and spices. Pulse several times until cilantro pieces are finely chopped.
After rice is cooked, fluff with a large spoon. Stir in melted butter and herb mixture until combined. Garnish with fresh cilantro leaves, if desired.
