Easy Cilantro Lime Rice (Top 8 Free)

This Easy Cilantro Lime Rice uses minimal ingredients and comes together easily. It’s an excellent side with burritos, tacos, or even a simple baked chicken dinner. You could also add it to chili, or a salad with chicken and your favorite fresh veggies for a southwest twist. I’m not usually a big fan of fresh cilantro myself, but I love this rice!

Easily make this cilantro rice recipe allergy friendly and Top 8 Free by substituting your favorite dairy free margarine in place of the butter.

Cilantro Lime Rice is an easy recipe to make for guests, too. Kids love it, and it’s quick to make in just a few steps:

  1. Cook your rice.
  2. Prepare your cilantro by washing and removing the bulk of the stems.
  3. Pulse together remaining ingredients in a food processor.
  4. Stir your butter and herb blend into the rice, and you’re set!

Easy Cilantro Lime Rice (Top 8 Free)

This cilantro lime rice is the perfect combination of lime, fresh cilantro and buttery rice, and makes an excellent side dish for a variety of meals!

Ingredients

  • 2 cups rice, uncooked
  • 1/4 cup butter or margarine
  • 1 cup fresh cilantro, loosely packed
  • 1 1/2 Tbsp lime juice
  • 1/2 to 1 tsp salt (I use 1 teaspoon, but this may be too salty for some)
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder

Instructions

  • Rinse and cook rice in a rice cooker, or according to package instructions.
  • Wash cilantro and remove stems (I leave some in, but remove the bulk of it).
  • In a food processor (I love our Ninja), combine melted butter, cilantro, lime juice, and spices. Pulse several times until cilantro pieces are finely chopped.
  • After rice is cooked, fluff with a large spoon. Stir in melted butter and herb mixture until combined. Garnish with fresh cilantro leaves, if desired.
