Dairy Free Gluten Free Green Bean Casserole

Green Bean Casserole is a classic holiday staple… it’s a must at our Thanksgiving dinner, even with food allergies! The traditional way to make it is of course to used canned, condensed soup. However, with food allergies, this isn’t always an option. This easy Green Bean Casserole is thickened with cornstarch instead of flour, and dairy free substitutes work out just as well.

When we were wheat/gluten free, I used some GF fried onions I found at Aldi that tasted just like French’s original fried onions. I’m not sure if they still carry them, but there are a few GF varieties available on Amazon (linked below recipe). I’m sure it would be more cost effective to find some in store, though!

I should also mention that my recipe uses a chicken (or vegetable if you’re vegetarian/vegan) flavor base, instead of your classic mushroom. This mostly only to save on time, as I have an infant and toddler at home with me right now – and because I’m not the biggest mushroom fan myself. Adding chopped, lightly sauteed mushrooms to the sauce as it cooks may give it that extra mushroom flavor boost.

While this dairy free and gluten free Green Bean Casserole is made almost entirely from scratch (except the fried onions 😉 ), it’s not as complicated as it sounds. The sauce comes together quickly on the stove with minimal ingredients, then it’s mixed with the green beans and fried onions, and tossed in the oven to bake.

My son is allergic to eggs, peanuts, and tree nuts. While most condensed soups don’t explicitly contain these ingredients, I’ve just found it tastes better to make it from scratch (and I don’t have to worry about cross contact with his allergens).

Ingredients

  • 1 Tbsp butter or DF margarine
  • 1/2 cup milk or DF milk
  • 2 Tbsp cornstarch
  • 1 cup chicken broth or vegetable broth
  • 1 tsp minced garlic, or 1/8-1/4 tsp garlic powder
  • 1/4 tsp salt (optional)
  • black pepper to taste
  • 1/2 tsp soy sauce (optional)
  • 1 pound frozen green beans, cooked — about 4 cups
  • 1 1/3 cups Fried Onions or GF Fried Onions

Instructions

  • Preheat oven to 350F. Spray a casserole dish with cooking spray.
  • Steam green beans, or cook according to package instructions, and set aside. Fresh, cooked green beans also work out well!
  • Melt butter in saucepan over medium heat. If using minced garlic, add to pan and saute for about two minutes. If using garlic powder, it can be whisked in any time.
  • Whisk cornstarch into cold milk until dissolved (cold liquid is important, or the cornstarch may clump up right away), then add to saucepan. Cook over medium heat until it begins to thicken, whisking constantly to prevent lumps.
  • Once it just begins to thicken (this will happen fast!), thoroughly whisk in the broth, salt, and optional soy sauce. Continue to cook over medium heat, whisking very frequently until sauce is thickened to a gravy-like consistency. Remove from heat.
  • Stir in green beans and 2/3 cup fried onions. Add to prepared casserole dish. Bake for 25 minutes at 350F. Top with remaining 2/3 cup fried onions, and bake an additional 5 minutes.

Notes

Sauce will thicken once it cools slightly.
