This simple recipe requires no special egg substitutes, aside from a small amount of applesauce. They stay soft and chewy, even long after cooling!
These egg free cookies can also be made dairy free by substituting dairy free stick margarine. Margarine tubs have higher water content, so sticks are best.
How to Make Earth Day Cookies
For full recipe and instructions, click “jump to recipe” below.
- In a large bowl, stir together softened butter and sugar until creamy and well-combined. Stir in vanilla, applesauce, and milk.
- In a separate smaller bowl, stir together flour, baking powder, and salt. Add the dry mix to the wet mixture, and stir until combined. If dough seems dry, add 1 teaspoon of additional milk at a time.
- After mixing your cookie dough, divide the batter into two equal amounts (this doesn’t have to be perfect). Add green food coloring to one bowl, and blue coloring to the other. Stir each batch until color is evenly mixed in.
- Roll together a little dough from each bowl to make a blue and green marbled dough ball. Each ball should be about 1 1/2 to 2 Tablespoons.
- Place onto cookie sheet spaced 2 inches apart, and bake for 10-12 minutes. Bake time will depend on the size of your cookies.
You’ll want to remove cookies before they start to brown – they may look slightly puffy, but they will set on the pan once out of the oven. - Allow cookies to cool on the pan for 3-5 minutes before carefully transferring to a wire cooling rack. If desired, drizzle with icing once fully cooled.
Earth Day Cookies (Egg Free)
Ingredients
- 2/3 cup granulated sugar
- 1/2 cup butter (softened, but not completely melted)
- 1 1/2 Tablespoons milk
- 1 Tablespoon unsweetened applesauce, level
- 1/2 tsp vanilla
- Food Coloring
- 1 1/3 cups all purpose flour, lightly spooned into measuring cup and leveled across the top
- 1/2 teaspoon baking powder (not soda)
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350F.
- In a large bowl, stir together softened butter and sugar until creamy and well-combined. Stir in vanilla, applesauce, and milk.
- In a separate smaller bowl, stir together flour, baking powder, and salt.
- Add the dry mix to the wet mixture, and stir until combined. (If dough seems dry, add 1 teaspoon of additional milk at a time.)
- Divide dough evenly into two bowls (I use the same bowls used for mixing dry/wet ingredients). Add blue food coloring to one bowl, and green food coloring to the second bowl. Stir each until color is evenly distributed.
- Roll together some dough from each bowl to make a blue and green marbled dough ball. Each ball should be about 1 1/2-2 tablespoons.
- Place cookies onto cookie sheet at least 2 inches apart. Bake at 350F for 10-12 minutes. They will look slightly puffy when removed, but they will set on the pan (and deflate a bit) once out of the oven.
- Allow cookies to cool on the pan for 3-5 minutes before carefully transferring to a cooling rack.
- If desired, drizzle with glaze (see recipe in notes below) once cookies are fully cooled.
Notes
- 1/2 cup confectioners sugar
- 2-3 tsp milk
- 1/4 tsp vanilla extract
- Pinch of salt (optional)
