Egg Free Sausage Breakfast Bites are a savory and fun addition to any breakfast or brunch! Savory breakfast sausage and cheese baked into a bite sized, egg free breakfast biscuit – what’s not to love? These eggless breakfast bites are perfect for brunch, and great for toddlers (mine lovingly calls them “Fuffins” – that’s toddler talk for “Muffins”).

To make prep quicker, you can cook and drain the sausage ahead of time and whisk your dry ingredients until you’re ready to bake. Or, for an even faster option, you can simply dice up precooked sausage links (Johnsonville is my family’s go-to allergy friendly brand). If you have a dairy / milk allergy, try using your favorite dairy free substitutes for the milk, margarine, and cheese shreds –– they would also be tasty without the cheese, since the sausage provides a bit of richness.

Feel free to modify the spices to your liking – I’ve also added garlic powder in the past. Try adding some crushed red pepper or cayenne for a bit of a bite. Egg Free Sausage Breakfast Bites
Ingredients
- 1 pound breakfast sausage
- 1 cup shredded cheddar cheese
- 1 cup all purpose flour (GF 1:1 all purpose flour will also work)
- 1 ½ tsp baking powder
- 1 tsp sugar (optional)
- 3/4 cup milk
Instructions
- Preheat oven to 400F. Lightly spray mini muffin tins with cooking spray (about 24 mini muffins).
- Cook sausage in a skillet over medium to medium heat until cooked through, breaking into small pieces with a heat-safe spatula or wooden spoon.
- Stir together flour, baking powder, sugar (optional) in a large bowl. Stir in shredded cheese last.
- Add sausage to dry ingredients, and stir. Add milk and stir just until moistened.
- Scoop mixture into mini muffin tin, filling each cup to the top (will make about 24 mini muffins). Bake for about 15 minutes at 400F.
Notes
- Easily make this recipe gluten free by substituting your favorite 1:1 GF all purpose flour.
- This recipe can also be made dairy free with your favorite DF milk and cheese-style shreds.
Could you make the “dough” ahead and bake them the next morning?
Hello! I wouldn’t recommend waiting to bake these, since the batter/dough will begin reacting with the baking powder right away once it’s mixed. They can easily be reheated in the oven the next day, though!

My family gobbled these up! What a fabulous recipe! It is so tricky finding good warm breakfast meals without eggs, but this is a keeper for sure! I used a regular muffin pan and baked them at 375 degrees for 25 minutes and they were perfect. I’m excited to try them again with some pepperjack cheese and maybe some bacon pieces tossed in as well. Thank you for the great recipe!!

I was invited to prepare these for an event but it’s long distance and several days in transit. Can these little muffins be prepared, baked, frozen and reheated in microwave or oven?
Hi Melissa! These would probably work out just fine baked and frozen ahead of time. I have done this with my Sausage Hash Brown Bites (similar to these!) many times before. I would try reheating in the oven on a sheet pan at 350F for 10 minutes or so. 🙂
