It’s a great alternative as part of an egg free breakfast, and is inspired by my toddler son, who has an egg allergy. Paired with grains and fruit, they complete a balanced eggless breakfast.

Speaking of picky toddlers… one of the only ways my son will eat meat is if it’s hidden among veggies. With his egg and nut allergies, it can be difficult to find protein for him in the morning. He’ll eat three pancakes, a ton of fruit, and as many Cheerios as you’ll give him. But meat? Nah. So I added black beans, sweet potatoes, and corn to his breakfast sausage one morning – I don’t even think he realized it was meat. He immediately gobbled up two patties along with his pancakes. Although, to be fair, they WERE more veggie than sausage at that point. High protein, egg free breakfast? Maple Breakfast Sausage with Black Beans and Sweet Potatoes

This flavorful maple breakfast sausage combines pork sausage with black beans, sweet potatoes, and corn. Ingredients

  • 1 pound ground sausage
  • 1 cup black beans, rinsed well
  • 1/3 cup corn (may omit, if desired)
  • 1 cup finely diced sweet potatoes (I use a food processor)
  • 3 Tbsp applesauce
  • 1 Tbsp maple syrup
  • 1/3 cup oatmeal

Spices (May adjust or modify according to preferences)

  • 1 Tbsp parsley
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp thyme
  • ¼ tsp sage
  • ¼ tsp salt (optional)

Instructions

  • Preheat oven to 350F and spray baking sheets with oil (don't skip this step!). Optional: line baking sheets with aluminum foil sprayed with oil.
  • Finely chop your sweet potatoes and corn, or pulse them in a food processor into very small pieces. 
  • Mash black beans with a fork, or pulse several times in a food processor. 
  • Mix ALL ingredients together with hands or large spoon until well combined.
  • Shape into small patties (approximately 2 tablespoons of mix per patty). Place onto greased baking sheet.
  • Bake at 350F for 12 minutes. Carefully flip with spatula, and bake an additional 10-12 minutes.
